Winemaker Description
Aromas of ripe, dark berry fruit are enveloped with subtle hints of mocha and chocolate. The mid-palate is intense with juicy flavors of ripe caneberry fruit. The finish is balanced with mature acidity and gentle tannins.

The Vineyards
The vineyards of Parkers Estate are located throughout the many micro climates comprising Sonoma’s wine country.  Soil types vary in composition from deep red “Terra Rosa” loams, to weathered volcanic ash. The vines are carefully tended and grown in hedgerows, allowing the late afternoon sun to bathe the grapes in gentle warmth.

Vinification
The grapes for the Parkers Estate Cabernet Sauvignon were picked at perfect sugar composition.  Harvest began at daybreak allowing the grapes to be destemmed and moved into fermentation tanks by lunch. Select yeasts were added after a four day cold soak. Fermentation lasted fourteen days before the wine was pressed at dryness.  The wine was bottled with minimal filtration after sixteen months in French oak.

Tasting and Pairing
Rich ruby in color, this wine brings forth aromas of black fruit with a hint of cloves. Flavors of dark berry and pomegranate are accentuated with vanilla. The finish is long and the palate luxurious.  This balanced Cabernet Sauvignon pairs well with hearty fire-grilled red meats, slow-braised venison or grilled polenta with berry-infused brown sauce.
